Guilt-Free Carrot Cake Smoothie

I was inspired on my drive home the other day when a craving for carrot cake hit me. I didn't have time to make an actual carrot cake, and I'm not fond of all of that sugar in a typical carrot cake anyway. So I thought, "Hmmm, I bet, with the right spices, I could make a smoothie that tastes just like it." And I did!

Ingredients:

1 c chopped carrots

2/3 c rolled oats

1/4 c unsweetened coconut

1/16 tsp (pinch) ground ginger

1/2 tsp ground cinnamon

1/4 tsp ground nutmeg

1/4 tsp ground allspice

1/8 tsp ground cloves

1 tsp vanilla extract

1/4 tsp stevia

1/8 tsp sea salt

1 c plain Greek yogurt

8 ice cubes

1/2 c cold water


Directions:

Blend until smooth. I love my Nutribullet for smoothie making. It perfectly blends everything.


I think this would be very good with some walnuts, maybe some melted organic pastured butter, and pineapple too.


This smoothie tastes just like frosted carrot cake, but has no sugar or other processed junk, so you can enjoy it completely guilt-free!

Since I was making this for both Mr. Hippie and myself, I used my largest cup for my Nutribullet. As such, it makes 2 small servings, but I could easily finish the entire 20 oz carrot cake smoothie myself, and since it doesn't have any junk in it, I'd finish it guilt-free!
