Guilt-Free Carrot Cake Smoothie

I was inspired on my drive home the other day when a craving for carrot cake hit me. I didn’t have time to make an actual carrot cake, and I’m not fond of all of that sugar in a typical carrot cake anyway. So I thought, “Hmmm, I bet, with the right spices, I could make a smoothie that tastes just like it.” And I did!

Guilt-free Carrot Cake Smoothie
Serves 1
This smoothie tastes just like frosted carrot cake, but has no sugar or other processed junk, so you can enjoy it completely guilt-free!

  1. 1 c chopped carrots
  2. 2/3 c rolled oats
  3. 1/4 c unsweetened coconut
  4. 1/16 tsp (pinch) ground ginger
  5. 1/2 tsp ground cinnamon
  6. 1/4 tsp ground nutmeg
  7. 1/4 tsp ground allspice
  8. 1/8 tsp ground cloves
  9. 1 tsp vanilla extract
  10. 1/4 tsp stevia
  11. 1/8 tsp sea salt
  12. 1 c plain Greek yogurt
  13. 8 ice cubes
  14. 1/2 c cold water
  1. Blend until smooth.
  1. This would be great with walnuts, pineapple, or melted butter!

I think this would be very good with some walnuts, maybe some melted organic pastured butter, and pineapple too. 

Since I was making this for both Mr. Hippie and myself, I used my largest cup for my Nutribullet. As such, it makes 2 small servings, but I could easily finish the entire 20 oz carrot cake smoothie myself, and since it doesn’t have any junk in it, I’d finish it guilt-free!

    This looks yummy. I love my smoothees too and make a bunch of different flavors and add lots of great stuff. Thanks for this idea too.
