Popcorn...it brings up so many memories. Of going to the movies as a kid. Those big huge buckets of salty, buttery goodness that we'd stuff ourselves silly with. Extra butter? Yes, please! Maybe a memory of sitting around the campfire with family, mom or dad popping corn over the fire, the smell of melting butter mixing with charcoal wood smoke. There's nothing like it. Too bad that buttery deliciousness at the movies is loaded with chemicals! Besides table salt reaching almost 1000 mg, there are food dyes, pesticide residues, hydrogenated trans fats, GMO soy, and other chemicals with names most of us can't pronounce let alone know what they are. And the microwave version isn't any better. The good news is that making your own is super duper simple. We are talking just 4 ingredients for the best popcorn you will ever eat. Did I mention guilt free? A nutritious, healthy snack that you will want to make every day. What could be better?

Easy, Nutritious, Delicious Healthy Popcorn Recipe

Only 4 Ingredients:

1. Organic, unrefined, cold-pressed coconut oil (Find it here.) 2. Organic popcorn (I've tried a lot of brands. This is my favorite because there are less kernels to get stuck in your teeth.) 3. Organic unsalted butter or ghee from pastured cows. (This is my favorite brand.)

4. Sea Salt (I like Himalayan the best personally.) Put a healthy dollop of coconut oil (~1/4 cup) into a large stock pot and turn heat up to medium-high.

When the oil has melted, add a single kernel of corn. If it sizzles right away, the oil is hot enough.

Cover the bottom of the pan in a single layer of popcorn. Put cover on pan.

Remove pan from heat as soon as popcorn stops popping.

Best to have a large bowl nearby to dump the popcorn into right after popping so it won't burn.

Melt lots of butter (don't be stingy...now is not the time to count calories or fat, this is what eating real, whole food is about!). For a large stockpot, I melt between 1/2 to 3/4 of a stick of butter. Or an entire stick if I'm really going gourmet and made a full stockpot of popcorn.

Drizzle the butter over the popcorn, mixing it up halfway through.

You can toss the popcorn if you have mad skilz, but don't blame me if you attempt it and the popcorn goes everywhere! Sprinkle with sea salt to taste, toss again to thoroughly coat everything and enjoy.

HINTS for an even better Healthy Popcorn Recipe:


I like to swap out the pot cover for a mesh splatter guard about halfway through popping. It allows the steam to escape and the popcorn to dry out and be more crunchy. Make sure to pop on medium-high and not full out high heat - you will have less burnt kernels!
